Ingredients

  • 1 onion, chopped
  • 1/4 cup olive oil
  • 2 tablespoons butter
  • 10 ears fresh corn, kernels cut from cob
  • 4 fresh tomatoes, peeled, seeded, and diced
  • 1 small bell pepper, seeded and diced
  • salt to taste
  • pepper to taste

Instructions

  1. Saute chopped onion in olive oil and butter for a few minutes.
  2. Add diced bell pepper and cook for a couple of minutes.
  3. Add corn kernels and stir continuously until just about done.
  4. Add peeled, seeded, and diced tomatoes to the mixture.
  5. Cook for about 2 more minutes.
  6. Season with salt, pepper, and sugar to taste.
