Ingredients

  • 6 medium potatoes
  • 1/4 cup melted butter
  • 2 cups shredded Cheddar cheese
  • 8 oz sour cream
  • 3 cups chopped green onions
  • 1 teaspoon salt
  • 1 teaspoon pepper

Instructions

  1. Cover potatoes with salted water and cook until tender.
  2. Cool slightly, peel, and coarsely shred the potatoes.
  3. In a mixing bowl, combine shredded potatoes with melted butter, sour cream, chopped green onions, salt, and pepper.
  4. Stir in shredded Cheddar cheese until well mixed.
  5. Transfer to a baking dish and bake at 375°F (190°C) for about 15-20 minutes until heated through and cheese is bubbly.
  6. Serve hot as a delicious side dish.
