Ingredients

  • 1/2 lb. elbow macaroni
  • 1/4 cup softened butter
  • 1 lb. sliced and diced American cheese
  • 3 eggs
  • 1 (12 oz.) can evaporated milk
  • Pinch of salt
  • Pinch of pepper

Instructions

  1. Preheat oven to 350°F.
  2. Cook macaroni according to package directions until almost done.
  3. Drain macaroni and rinse with cold water.
  4. Grease a deep, 8-inch round baking dish with one-third of the softened butter.
  5. Pour half of the macaroni into the dish.
  6. Spread two-thirds of the cheese over the macaroni.
  7. Dot with one-third of the butter.
  8. Repeat with remaining macaroni and cheese.
  9. Lightly beat eggs with a fork while slowly pouring half a can of evaporated milk into the mixture.
  10. Pour the egg and milk mixture over the macaroni in the baking dish.
  11. Pour the remaining evaporated milk over the mixture until level with the macaroni.
  12. Dot the remaining butter over the top.
  13. Bake for 1.5 hours or until sides pull away from the pan and the mixture is not wet in the center.
  14. Remove from oven and cool for 10 minutes before serving.
