Ingredients

  • 2 eggs
  • 1/2 cup flour
  • 1/4 teaspoon salt
  • 1 cup light brown sugar
  • 1/4 teaspoon baking powder
  • 1 cup pecans

Instructions

  1. Preheat the oven to 350°F (175°C).
  2. Butter eighteen 2-inch cupcake tins.
  3. In a mixing bowl, thoroughly combine eggs, flour, salt, brown sugar, and baking powder.
  4. Fill each cupcake tin 2/3 full with the batter.
  5. Place a pecan on top of each filled tin.
  6. Bake until the cakes shrink slightly from the pans, about 8 to 15 minutes.
  7. Remove from oven and let cool before removing from tins.
