Marinated Bean Bonanza

Ingredients

  • 1/2 c. vinegar
  • 1/2 c. vegetable oil
  • 1/3 c. sugar
  • 1 tsp. salt
  • 1/4 tsp. pepper
  • 2 c. cut green beans
  • 1 can kidney beans, drained
  • 1 small green pepper, chopped
  • 1 small onion, sliced
  • 1 1/2 c. sliced cooked carrots

Instructions

  1. Mix vinegar, oil, sugar, salt and pepper in a 1 1/2-quart bowl.
  2. Mix in beans, green pepper and onion.
  3. Cover; refrigerate at least 8 hours.
  4. Before serving, remove to salad bowl with slotted spoon.
