Ingredients

  • 1/4 cup salad oil
  • 1/2 cup white wine vinegar
  • 2 tablespoons chopped parsley
  • 1/2 teaspoon salt
  • 1 teaspoon basil
  • 1/2 teaspoon sugar
  • 1/2 teaspoon pepper
  • 1 large red onion
  • 1 to 2 pounds cooked smoked sausage
  • 3 to 4 tomatoes

Instructions

  1. Mix salad oil, white wine vinegar, chopped parsley, salt, basil, sugar, and pepper together in a measuring cup; set aside.
  2. Slice red onion very thin.
  3. Slice cooked smoked sausage at a bias cut.
  4. Slice tomatoes thin.
  5. Put sliced ingredients in a marinade container or bowl with an airtight lid and marinate for at least 8 hours.
  6. Allow to marinate overnight for best flavor.
  7. Serve with Ritz or other crackers.
