Ingredients

  • 2 egg whites
  • 1 1/4 cups sugar
  • 4 tablespoons cold water
  • 9 large marshmallows
  • 1/2 teaspoon extract
  • 1/4 teaspoon baking powder

  1. Place egg whites, sugar, and cold water in the top of a double boiler.
  2. Place over boiling water and beat with an egg beater for 10 minutes or until thick, adding marshmallows as it begins to thicken.
  3. Beat until smooth. Remove from heat and add vanilla extract.
  4. Beat until thick and nearly cold. Add baking powder.
  5. Continue to beat until thick enough to spread on cake without running.
