Marshmallow Sweet Potato Casserole Recipe

Ingredients

  • 8 med. sweet potatoes
  • 2 tbsp. butter
  • 1/2 c. warm lowfat milk
  • 1/2 teaspoon salt
  • 1/2 teaspoon cinnamon or possibly nutmeg
  • 1/4 teaspoon paprika
  • 1 c. minced walnuts
  • 1/2 pound marshmallows

Instructions

  1. Cook sweet potatoes till tender.
  2. Remove skins and mash.
  3. When smooth, beat in butter, lowfat milk, salt, spices.
  4. Beat well.
  5. Mix in walnuts and turn into buttered baking dish.
  6. Top with marshmallows and bake at 350 degrees till marshmallows puff and become golden.
