Ruth'S Zucchini Bread

Instructions
- Put flour, zucchini, sugar, coconut and nuts in a large bowl and mix.
- Add baking soda, baking powder and salt, and then add vanilla, oil and eggs.
- Mix all together very well.
- Put in two greased 5 1/2 x 9 1/2-inch loaf pans, filling each about half full.
- Bake at 325° for 45 minutes to 1 hour.
