Ruth'S Zucchini Bread

Ingredients

  • 3 c. flour
  • 3 c. unpeeled zucchini, grated
  • 2 c. sugar
  • 1 c. coconut
  • 1/2 c. chopped nuts
  • 1 tsp. baking soda
  • 1 tsp. baking powder
  • 1 tsp. salt
  • 2 tsp. vanilla
  • 1 c. oil
  • 3 eggs

Instructions

  1. Put flour, zucchini, sugar, coconut and nuts in a large bowl and mix.
  2. Add baking soda, baking powder and salt, and then add vanilla, oil and eggs.
  3. Mix all together very well.
  4. Put in two greased 5 1/2 x 9 1/2-inch loaf pans, filling each about half full.
  5. Bake at 325° for 45 minutes to 1 hour.
