Marshmallowed Sweet Potatoes

A warm, sweet casserole combining tender sweet potatoes, tart apples, cinnamon, and gooey marshmallows, perfect for holiday dinners or comforting family meals.

Ingredients

  • 2 (16 oz.) cans sweet potatoes, drained and sliced
  • 4 apples, peeled and sliced or 1 can sliced apples
  • 3 Tbsp. margarine
  • 1/2 tsp. cinnamon
  • 1 bag large marshmallows

Instructions

  1. Place half of the sweet potatoes in the bottom of an 8 x 8-inch casserole dish.
  2. Dot with half of the margarine and sprinkle with half of the cinnamon.
  3. Layer with half of the sliced or canned apples.
  4. Repeat the layers with remaining sweet potatoes, margarine, cinnamon, and apples.
  5. Top with a bag of large marshmallows.
  6. Bake at 350°F (175°C) for about 30 minutes, until marshmallows are golden.
  7. Be careful, marshmallows scorch easily!
  8. This dish doubles well and can be prepared a day ahead if canned apples are used.
  9. Great served with ham, turkey, or roast beef.
