Ingredients

  • 1 chicken (about 2 1/2 lb.), cut up
  • 1 tsp. salt
  • 1/4 tsp. pepper
  • 1/2 cup salad oil
  • 1/2 cup gin
  • 2 Tbsp. dry vermouth
  • 2 Tbsp. lemon juice

Instructions

  1. Season chicken pieces with salt and pepper.
  2. Place chicken in a baking dish.
  3. Combine salad oil, gin, dry vermouth, and lemon juice.
  4. Marinate chicken in the mixture for 1/2 hour or longer, turning once or twice.
  5. Preheat grill to medium-high heat.
  6. Remove chicken from marinade, letting excess drip off.
  7. Grill chicken skin side down for 10 minutes, basting with marinade.
  8. Continue grilling for 25 to 30 minutes or until chicken pieces are tender and well browned.
