Ingredients

  • 6 to 7 boiled potatoes, cooled and grated
  • salt
  • 1 can cream of chicken soup
  • 1/4 cup melted butter or margarine
  • 1/2 pint sour cream
  • 1/3 cup chopped onions
  • 1 cup grated cheese
  • 2 tablespoons melted butter

Instructions

  1. Spread the grated, cooled boiled potatoes evenly in the baking pan and sprinkle with salt.
  2. In a bowl, mix the cream of chicken soup, sour cream, chopped onions, grated cheese, and 1/4 cup melted butter until well combined.
  3. Spread this mixture evenly over the potatoes in the pan.
  4. Pour the remaining 2 tablespoons of melted butter on top of the mixture.
  5. Sprinkle crumbled cornflakes over the top for added crunch.
  6. Bake at 350°F (177°C) for 45 minutes to 1 hour until bubbly and golden on top.
