- Spread the grated, cooled boiled potatoes evenly in the baking pan and sprinkle with salt.
- In a bowl, mix the cream of chicken soup, sour cream, chopped onions, grated cheese, and 1/4 cup melted butter until well combined.
- Spread this mixture evenly over the potatoes in the pan.
- Pour the remaining 2 tablespoons of melted butter on top of the mixture.
- Sprinkle crumbled cornflakes over the top for added crunch.
