Ingredients

  • 3 large eggs
  • 2 c. sugar
  • 1 c. cooking oil
  • 2 c. grated zucchini
  • 3 tsp. vanilla
  • 3 c. flour
  • 1 tsp. salt
  • 1 tsp. baking soda
  • 1/4 tsp. baking powder
  • 1 tsp. cinnamon
  • 1 c. nuts, chopped
  • 1 c. raisins

Instructions

  1. Combine eggs, sugar, oil, zucchini and vanilla; stir.
  2. Add flour, salt, baking soda, baking powder and cinnamon.
  3. Stir until blended, then add nuts and raisins.
  4. Bake at 350° for about 1 hour in an ungreased and floured 9 x 5-inch loaf pans.
  5. Makes 2 loaves.
