Maryland Crab Shells

Ingredients

  • 40 jumbo pasta shells
  • water (for cooking pasta)
  • 2 tablespoons green peppers, chopped
  • 1 tablespoon red onion, chopped
  • 4 tablespoons butter
  • 1 12 lbs lump crabmeat, picked through
  • 12 teaspoon black pepper
  • 1 teaspoon Old Bay Seasoning
  • 1 egg, slightly beaten
  • 2 12 cups milk
  • 1 cup mayonnaise
  • 3 tablespoons all-purpose flour

Instructions

  1. Preheat oven to 350F.
  2. Cook pasta in boiling water according to package directions.
  3. Drain, rinse and cool.
  4. Meanwhile, melt 1 tablespoon butter in skillet.
  5. Add pepper and onion and cook until softened, about 3-5 minutes.
  6. Combine crab, peppers and onions, black pepper, egg, mayonnaise, 1/2 teaspoon Old Bay and 1/2 cup milk.
  7. Melt 1/2 teaspoon butter in each of two 11"x7"x2" baking dishes.
  8. Spoon filling into pasta shells and arrange shells in dishes.
  9. Melt remaining butter over medium-low heat.
  10. Whisk in flour.
  11. Gradually whisk in remaining milk.
  12. Cook until slightly thickened.
  13. Stir in cheese.
  14. Drizzle sauce evenly over shells.
  15. Sprinkle with remaining Old Bay seasoning.
  16. Bake at 350 for 30 minutes, or until bubbly.
  17. Cool 10 minutes before serving.
