Ingredients

  • 1 lb ground round
  • 1 (6 oz) package Mexican-style cornbread mix
  • 1 can whole kernel corn, drained
  • 8 oz shredded cheddar cheese
  • 1 package taco seasoning
  • 2 eggs
  • 2/3 cup milk

Instructions

  1. Preheat oven to 400°F (200°C).
  2. Brown ground beef in a skillet, then drain excess fat.
  3. Add taco seasoning and the required water from the package to the cooked beef and simmer according to package instructions.
  4. Mix the Mexican-style cornbread mix according to package directions.
  5. Stir in the drained corn, cooked meat with seasoning, and half of the shredded cheddar cheese into the cornbread batter.
  6. Pour the mixture into a greased baking dish and bake for 25 minutes.
  7. Sprinkle the remaining shredded cheddar cheese on top and bake for an additional 5 minutes or until cheese is melted and bubbly.
