Spam Enchiladas

Creamy, cheesy Spam enchiladas with savory olives and onions, wrapped in softened tortillas and baked with rich enchilada sauce, perfect for a hearty Mexican-inspired meal.

Ingredients

  • 2 (12 oz.) cans Spam, grated
  • 2 lb. Cheddar cheese, grated
  • 2 small cans chopped ripe olives
  • 2 medium onions, chopped
  • 4 (10 oz.) cans enchilada sauce

Instructions

  1. Mix grated Spam, grated cheddar cheese, chopped ripe olives, and chopped onions well, reserving 1 to 2 cups of cheese for topping.
  2. Heat 2 cans of enchilada sauce in a frying pan.
  3. Separate tortillas and drop them into the hot enchilada sauce for a second or two to soften enough to roll.
  4. Place a softened tortilla on a cookie sheet with sides, put 2 tablespoons of meat mixture on each tortilla, and roll it up.
  5. Push the rolled tortillas to the back of the pan.
  6. Repeat until all of the meat mixture is used.
  7. Pour the remaining enchilada sauce over the rolled tortillas.
  8. Sprinkle the top generously with the reserved grated cheese.
  9. Bake at 375°F until the cheese is melted and bubbly.
