  • 1 c. salt
  • 8 large onions
  • 12 hot peppers
  • 12 bell peppers
  • 5 c. sugar
  • 1 qt. vinegar
  • 1 tsp. cinnamon
  • 1 tsp. allspice
  • 1 tsp. cloves
  • water

Instructions

  1. Grind green tomatoes, onions, and hot and bell peppers in a food chopper.
  2. Add salt and let stand overnight.
  3. Drain the mixture.
  4. Add equal parts of water and vinegar to cover the mixture.
  5. Bring to a boil.
  6. Drain again.
  7. Add sugar, 1 quart vinegar, cinnamon, allspice, and cloves.
  8. Boil for 20 minutes.
  9. Pack the mixture into jars and seal.
