  • 3/4 c. chopped stuffed green olives
  • 3/4 c. sliced celery
  • 1/4 c. diced scallion

Instructions

  1. Pare the potatoes, cover with boiling water, and bring to a boil.
  2. Cover and boil until tender; drain.
  3. Put the potatoes through a food mill or mash them until smooth; there should be about 4 cups.
  4. Add mayonnaise, cider vinegar, salt, white pepper, chopped green olives, sliced celery, and diced scallion.
  5. Mix thoroughly until well combined.
  6. Taste and add more salt if desired.
  7. Serve warm, garnished with parsley and extra olives, or serve cold, garnished with lettuce and extra olives.
