Ingredients

  • 3 small potatoes, peeled and cubed
  • 1 1/2 cups turnips, peeled and cubed
  • 1 to 2 tablespoons milk
  • 2 tablespoons margarine
  • 1 tablespoon chopped fresh parsley
  • dash of red pepper
  • 2 tablespoons freshly grated Parmesan cheese

Instructions

  1. In a large saucepan over medium heat, cook potatoes and turnips for 20 to 30 minutes or until tender.
  2. Drain the cooked potatoes and turnips.
  3. In a large bowl, combine the cooked potatoes, turnips, milk, and margarine.
  4. Mash until fluffy.
  5. Stir in chopped parsley, red pepper, and chopped chives.
  6. Spoon the mixture into a 1-quart shallow baking dish.
  7. Sprinkle with grated Parmesan cheese.
  8. Broil 3 to 4 inches away from heat for 1 to 2 minutes or until browned.
