Ingredients

  • 1/2 onion, diced
  • 1/4 stick butter or margarine
  • 2 Tbsp. olive oil
  • 2 Tbsp. parsley
  • 8 oz. whole tomatoes, chopped
  • 2 to 3 medium potatoes, sliced
  • salt and pepper to taste

Instructions

  1. Melt butter in a skillet and add olive oil.
  2. Sauté diced onion until translucent and add parsley.
  3. Add chopped tomatoes, sliced potatoes, salt, and pepper to the skillet.
  4. Cover and simmer for 30 minutes over medium heat or until potatoes are tender.
