Ingredients

  • 1 c. brown sugar, firmly packed
  • 2 Tbsp. water
  • 2 c. cold milk
  • 3 egg yolks, slightly beaten
  • 4 Tbsp. cornstarch
  • 2 Tbsp. butter
  • 1/2 tsp. vanilla

Instructions

  1. Mix sugar, water, and salt in the top of a double boiler.
  2. Boil over medium heat until a thick syrup forms, about 5 minutes.
  3. Mix 1/2 cup of cold milk with cornstarch to make a thin paste.
  4. Add 1 3/4 cups of milk to the paste, combine with hot syrup, and cook over hot water until thick and smooth.
  5. Continue cooking for 15 minutes longer, stirring constantly.
  6. Gradually stir a small amount of the hot mixture into the beaten egg yolks, then add the egg mixture back into the hot mixture and cook a few minutes longer.
  7. Add butter and vanilla to the mixture.
  8. Pour the filling into a 9-inch pie shell.
  9. Top with meringue and brown.
