Ingredients

  • 4 cups whole strawberries
  • 1 tablespoon flour
  • 1 cup sugar
  • 1 envelope unflavored gelatin
  • 1/2 cup heavy cream
  • 2 (3 oz) packages cream cheese
  • 1 (9-inch) baked pie shell

Instructions

  1. Sieve 2 cups of strawberries, reserving pulp and juice.
  2. Mix flour and sugar; add to sieved strawberries and cook for 10 minutes. Allow to cool.
  3. Dissolve unflavored gelatin in a small amount of warm water, then mix with the cooled strawberry mixture.
  4. In a separate bowl, beat heavy cream and cream cheese until smooth.
  5. Spread the cream cheese mixture evenly in the baked pie shell.
  6. Line the inside of the pie shell with remaining whole strawberries.
  7. Pour the cooled strawberry mixture over the arranged berries in the pie shell.
  8. Chill the pie until set, then serve with whipped cream.
