- Preheat oven to 350°F (175°C).
- Melt butter and set aside to cool slightly.
- Beat 2 eggs and add to the melted butter.
- Add sugar, vanilla, and coconut; beat until smooth.
- Add Bisquick and beat again by hand until smooth.
- Gently fold in the peeled meltons.
- Pour the mixture into an 8-inch or 9-inch pie pan.
- Bake for about 35 minutes or until the middle is done when tested with a toothpick.
- Cool for at least 1 hour before serving.
- If using an 8-inch pie pan, this recipe makes two pies; a 9-inch pan yields one.
