Ingredients

  • 8 boiled and peeled meltons
  • 1 cup sugar
  • 1 tablespoon vanilla
  • 1 cup Bisquick
  • 1 stick butter
  • 2 eggs
  • 1 cup coconut

Instructions

  1. Preheat oven to 350°F (175°C).
  2. Melt butter and set aside to cool slightly.
  3. Beat 2 eggs and add to the melted butter.
  4. Add sugar, vanilla, and coconut; beat until smooth.
  5. Add Bisquick and beat again by hand until smooth.
  6. Gently fold in the peeled meltons.
  7. Pour the mixture into an 8-inch or 9-inch pie pan.
  8. Bake for about 35 minutes or until the middle is done when tested with a toothpick.
  9. Cool for at least 1 hour before serving.
  10. If using an 8-inch pie pan, this recipe makes two pies; a 9-inch pan yields one.
