Ingredients

  • 2 egg whites
  • 1/2 tsp. vanilla
  • 1/4 tsp. salt
  • 1/4 tsp. cream of tartar
  • 1/2 c. sugar
  • 1/2 c. finely chopped pecans

Instructions

  1. Set oven to 300°F (150°C).
  2. Beat together egg whites, vanilla, salt, and cream of tartar until soft peaks form.
  3. Gradually add sugar and beat until stiff peaks form.
  4. Fold in finely chopped pecans.
  5. Spread the mixture onto the bottom and sides of a 9-inch pie pan.
  6. Bake at 300°F for 50 minutes.
  7. Turn off the oven and let the crust dry in the oven for 2 hours.
  8. Cool on a wire rack before serving.
