Ingredients

  • 2 egg whites
  • 2/3 cup sugar
  • 1 teaspoon mint extract
  • 6 ounces chocolate chips
  • pinch of cream of tartar
  • 3 to 5 drops food coloring

Instructions

  1. Preheat oven to 325°F.
  2. Line 2 cookie sheets with brown paper.
  3. Beat egg whites until frothy.
  4. Add a pinch of cream of tartar.
  5. Gradually add sugar and continue to beat on high until stiff peaks are formed.
  6. Fold in mint extract, food coloring, and chocolate chips.
