Ingredients

  • 1 1/2 lb. ground meat
  • 1 lb. grated Cheddar cheese
  • 1 can Mexicorn
  • 1 can cream of mushroom soup
  • 1 can cream of chicken soup
  • 1 can enchilada sauce
  • 6 corn tortillas

Instructions

  1. Brown the ground meat in a skillet; drain the grease.
  2. Mix the Mexicorn, cream of mushroom, and cream of chicken soups together in a bowl.
  3. In a 9 x 13-inch baking dish, place a layer of corn tortillas at the bottom.
  4. Spread the cooked ground meat over the tortillas.
  5. Pour the enchilada sauce over the meat layer.
  6. Sprinkle half of the grated Cheddar cheese on top.
  7. Spread the soup mixture evenly over the cheese.
  8. Add the remaining grated Cheddar cheese on top.
  9. Bake in a preheated oven at 350°F (175°C) for 30 to 40 minutes until bubbly and golden.
  10. Serve hot, accompanied by chips or your favorite sides.
