Ingredients

  • 4 to 5 boned skinless chicken breasts
  • 1 can diced green chilies
  • 1/4 to 1/2 lb. Jack cheese
  • 1/2 cup bread crumbs
  • 1/4 cup Parmesan cheese
  • 1 tablespoon chili powder
  • 1/2 teaspoon salt
  • 1/4 teaspoon cumin
  • 1/4 teaspoon pepper
  • 1/2 cup melted butter

Instructions

  1. Pound the chicken breasts until thin.
  2. Dip each breast in melted butter, then roll in bread crumbs mixture.
  3. Place a strip of Jack cheese and green chilies on each breast, then roll up and secure with a toothpick.
  4. Place the rolled chicken breasts in a greased oblong dish.
  5. Drizzle melted butter over each breast.
  6. Bake uncovered at 375°F for about 50 minutes to 1 hour.
