Mexican rice is a flavorful side dish featuring golden rice simmered in a tomato and garlic sauce, perfect for complementing Mexican and Latin American meals.

Ingredients

  • 2 cups rice
  • 1/2 cup oil
  • 4 or 5 fresh tomatoes
  • 2 cloves garlic
  • 2 or 3 chicken bouillon cubes
  • 1 medium onion
  • salt

Instructions

  1. In a food processor or blender, puree the tomatoes and garlic.
  2. Add enough hot water to make 4 cups and include 2 or 3 chicken bouillon cubes; set aside.
  3. In a heavy saucepan, heat the oil and cook the rice until golden brown.
  4. Pour off excess oil from the rice.
  5. Add the tomato mixture and salt to the rice, and bring to a boil.
  6. Cut the onion into fourths and place it on top of the rice.
  7. Reduce heat to low, cover, and cook for 20 minutes.
