Ingredients

  • 2 cups sugar
  • 1 teaspoon baking soda
  • 3/4 cup butter
  • 1 teaspoon vanilla
  • 1 cup buttermilk
  • 2 cups chopped pecans

Instructions

  1. In a 3-5 quart dish, combine sugar, baking soda, butter, and buttermilk.
  2. Cover with plastic wrap; punch small holes in the plastic.
  3. Microwave on 70% power for 15 minutes.
  4. Stir and continue cooking for 13-15 minutes, until soft-ball stage is reached.
  5. Add vanilla and beat with a mixer until soft peaks form.
  6. Stir in chopped pecans and pour into a buttered 12 x 7 inch dish.
  7. Cool and cut into small pieces.
