Ingredients

  • 3 eggs
  • 2 cups sugar
  • 1 cup oil
  • 1 tablespoon vanilla
  • 2 cups shredded unpeeled zucchini
  • 3 cups sifted flour
  • 1 teaspoon salt
  • 1 teaspoon baking soda
  • 1/2 teaspoon baking powder
  • 1 1/2 teaspoons cinnamon
  • 1 cup chopped walnuts

Instructions

  1. Beat eggs until fluffy; add sugar and beat well.
  2. Add oil and vanilla; then add shredded zucchini.
  3. Add sifted dry ingredients and blend thoroughly.
  4. Fold in chopped walnuts.
  5. Pour batter into a greased 10 1/2 x 8 x 2-inch pan.
  6. Bake at 325°F (163°C) for 2 hours.
