Ingredients

  • 10 oz. frozen broccoli
  • 3 cups cooked, diced chicken
  • 10 1/2 oz. can condensed cream of chicken soup
  • 1/4 cup sour cream
  • 1 tablespoon lemon juice
  • 1 teaspoon garlic powder
  • 1 teaspoon soy sauce
  • 1/4 cup grated Parmesan cheese
  • 1/4 cup Pepperidge Farm herb bread crumbs
  • 3 cups cooked rice

Instructions

  1. Pierce a hole in the broccoli package and cook the broccoli in the microwave for 3 minutes.
  2. In a mixing bowl, combine the condensed cream of chicken soup, sour cream, lemon juice, garlic powder, and soy sauce. Mix well and set aside.
  3. Put the cooked rice and broccoli in a greased 2-quart casserole dish and add half of the soup mixture.
  4. Add the cooked, diced chicken and the remaining soup mixture on top.
  5. Sprinkle grated Parmesan cheese and herb bread crumbs over the casserole.
  6. Cover with plastic wrap and microwave for 8 minutes.
  7. Turn the dish 1/2 turn and microwave for an additional 6 to 8 minutes until hot and bubbly.
