Ingredients

  • 1 medium orange
  • 1 medium tangerine
  • 1 medium lemon
  • 1 1/2 cups water
  • 1/8 teaspoon baking soda
  • 3 cups sugar
  • 3 ounces liquid fruit pectin

Instructions

  1. Score the outer peel of each fruit into quarters.
  2. Remove a thin layer of peel from each fruit, quarter by quarter.
  3. Discard the white membrane from the peel and fruit.
  4. Cut the peel into very thin strips.
  5. In a 2-quart microwave-safe bowl, combine the peel, water, and baking soda.
  6. Cover the bowl and microwave on High for 5 to 8 minutes or until the mixture comes to a full rolling boil.
  7. Continue to boil for 10 minutes, stirring once halfway through cooking.
