- Remove a thin layer of peel from each fruit, quarter by quarter.
- Discard the white membrane from the peel and fruit.
- Cut the peel into very thin strips.
- In a 2-quart microwave-safe bowl, combine the peel, water, and baking soda.
- Cover the bowl and microwave on High for 5 to 8 minutes or until the mixture comes to a full rolling boil.
- Continue to boil for 10 minutes, stirring once halfway through cooking.
