Ingredients

  • 1/2 lb bacon
  • 1 cup chopped onion
  • 5 cups peeled and cubed potatoes
  • 1/3 cup water
  • 1 (1 lb) can cream-style corn
  • 2 1/2 cups milk
  • 1/2 teaspoon salt
  • 1/4 teaspoon pepper

Instructions

  1. Cut bacon into small pieces.
  2. Combine bacon and chopped onion in a 3-quart casserole.
  3. Cook, covered, on Full power for 10 to 15 minutes, until bacon is cooked and onion is tender. Stir halfway through cooking time.
  4. Drain excess fat or liquid if needed.
  5. Add peeled and cubed potatoes and water to the casserole.
  6. Cook, covered, on Full power for 15 to 17 minutes or until potatoes are tender. Continue stirring during cooking.
  7. Add cream-style corn, milk, salt, and pepper to the casserole.
  8. Cook, covered, on Full power for 5 to 8 minutes. Do not boil. Stir halfway through cooking time.
