Quick and versatile microwave mini omelet perfect for busy mornings or on-the-go breakfasts, with savory cheese, bacon bits or ham, and optional green peppers for added flavor.

Ingredients

  • 1 egg
  • onion flakes to taste
  • bacon bits or ham pieces
  • 1 tsp water
  • 1 slice American cheese or Swiss cheese or both
  • green peppers (if desired)

Instructions

  1. Place all ingredients in paper cups, filling them about 1/2 to 3/4 full.
  2. Beat all ingredients well until combined.
  3. Cook in the microwave for about 45 seconds.
  4. Remove from the microwave and stir well.
  5. Check the texture; if too soft, microwave in 10 second segments until desired firmness.
  6. The top will be firm while the inside remains soft.
  7. Eat directly out of the cup; no dishes required.
