- Drain crisp pieces on paper.
- Cook chopped onion in the fat until tender.
- Add diced potatoes, salt, pepper, and the liquid drained from the clams.
- Add water if necessary, just to cover the potatoes; cook over low heat until potatoes are tender.
- Add minced clams. Stir in 2 cups of milk and light cream and set aside to ripen for 2 hours or longer.
