Ingredients

  • 1 lb. extra lean ground meat
  • 1 3/4 c. pinto beans and liquid
  • 1 3/4 c. cut up Contadina peeled whole tomatoes and juice
  • 2 Tbsp. tomato paste
  • 1/2 c. chopped onion
  • 1/4 c. chopped green pepper
  • 1 crushed garlic clove
  • 2 Tbsp. chili powder
  • 1 tsp. salt
  • 1/2 tsp. cumin
  • 1/4 tsp. red pepper flakes

Instructions

  1. Combine all ingredients in a microwave-safe 2-quart casserole dish. Cover and microwave on High for 5 minutes.
  2. Stir to break up the meat. Microwave for an additional 20 minutes, stirring every 10 minutes.
  3. If using less lean meat, micro-cook first and drain off excess fat before combining with other ingredients.
