Ingredients

  • 20 oz. can pineapple
  • 1/2 cup sugar
  • 1/4 teaspoon salt
  • 3 tablespoons cornstarch
  • 2 1/2 cups liquid (water and pineapple juice)
  • 2 eggs
  • 1 tablespoon oleo

Instructions

  1. Drain juice from the pineapple and add enough water to make 2 1/2 cups in a large microwave-safe bowl.
  2. Combine sugar, salt, and cornstarch in a bowl.
  3. Mix the dry ingredients and add 1/2 cup of the prepared liquid.
  4. Beat until smooth, then add eggs and beat until well combined.
  5. Add the remaining liquid and beat again.
  6. Microwave on High for 2 minutes.
  7. Remove and beat the mixture well.
  8. Microwave again on High for another 2 minutes and beat again.
  9. Repeat the process until about 8 minutes total, ensuring to beat well after every 2 minutes.
  10. When the mixture is thick enough, beat in the oleo.
  11. Pour into a 9-inch baked pie crust.
