- Drain juice from the pineapple and add enough water to make 2 1/2 cups in a large microwave-safe bowl.
- Combine sugar, salt, and cornstarch in a bowl.
- Mix the dry ingredients and add 1/2 cup of the prepared liquid.
- Beat until smooth, then add eggs and beat until well combined.
- Add the remaining liquid and beat again.
- Microwave on High for 2 minutes.
- Remove and beat the mixture well.
- Microwave again on High for another 2 minutes and beat again.
- Repeat the process until about 8 minutes total, ensuring to beat well after every 2 minutes.
- When the mixture is thick enough, beat in the oleo.
- Pour into a 9-inch baked pie crust.
