Ingredients

  • 2 c. sugar
  • 1 tsp. baking soda
  • 1 c. buttermilk
  • 3/4 c. butter
  • 1 tsp. vanilla
  • 2 c. pecan halves

Instructions

  1. Butter a 3-quart mixing bowl.
  2. Stir in sugar, baking soda, buttermilk, and butter.
  3. Microwave at 50% power for 30 to 40 minutes, stirring 2 or 3 times during cooking, until a soft ball forms in cold water.
  4. Add vanilla.
  5. Beat at high speed with a mixer until soft peaks form.
  6. Stir in pecans then drop by teaspoon onto waxed paper.
  7. Cool until firm.
  8. Store in a tightly covered container.
