Microwave Spinach Casserole

Ingredients

  • 10 oz. spinach (fresh, blanched or frozen, chopped and drained)
  • 1 1/2 c. cottage cheese
  • 1 1/2 c. grated Cheddar cheese
  • 2 eggs, slightly beaten
  • 3 Tbsp. flour
  • 1 Tbsp. dried chopped onion
  • 1/2 tsp. salt
  • 1/2 c. bread or cracker crumbs

Instructions

  1. If using frozen spinach, place package in a microwave dish. Cut a slit in top of package and microwave on High for 5 minutes. Remove from package and drain.
  2. If using fresh spinach, cook in boiling water until tender and drain.
  3. Combine spinach in dish with cheeses, eggs, flour, onion and salt.
