Ingredients

  • 1 lb. ground beef
  • 1 medium onion, chopped
  • 1 (15 oz.) can kidney beans, drained
  • 1/2 cup water
  • 1/2 to 1 package taco seasoning
  • 1/2 head lettuce, torn in bite-size pieces
  • 2 medium tomatoes, cut in chunks
  • 1/2 bell pepper, chopped
  • 1/2 cup shredded Cheddar cheese
  • 1/2 cup shredded Monterey Jack cheese
  • 1 cup broken corn chips
  • sour cream (optional)

Instructions

  1. Brown the ground beef and chopped onions on High for 4 1/2 to 6 1/2 minutes. Stir, then drain excess fat.
  2. Add drained kidney beans, water, and taco seasoning to the meat mixture.
  3. Cook uncovered in the microwave for 10 to 13 minutes on Medium until thick and bubbly, stirring once during cooking.
  4. Combine torn lettuce, chopped tomatoes, and chopped bell pepper in a salad bowl.
  5. Spoon the cooked meat mixture over the vegetables in the bowl.
  6. Top with shredded Cheddar and Monterey Jack cheeses, then sprinkle broken corn chips over the top.
  7. Serve immediately with optional sour cream.
