Ingredients

  • 1 cup coarsely crushed potato chips
  • 1 tablespoon chopped parsley
  • 1/2 teaspoon paprika
  • 1/2 teaspoon salt
  • 1/4 teaspoon onion powder
  • 4 chicken breasts skinless and boneless
  • 2 tablespoons mayonnaise

Instructions

  1. On waxed paper, combine crushed potato chips, parsley, paprika, salt, and onion powder.
  2. Brush chicken breasts with mayonnaise, then coat with the chip mixture.
  3. Place the coated chicken breasts in a 12 x 8-inch baking dish.
  4. Cover the dish with a paper towel and microwave on High for 8 to 10 minutes or until the chicken is done.
  5. Rearrange the chicken halfway through the cooking time.
