Ingredients

  • 1 lb. pasta
  • 1/4 c. olive oil
  • 2 to 8 cloves garlic, minced
  • 1/2 to 1 c. shredded fresh basil
  • 2 fresh tomatoes, chopped
  • salt
  • fresh ground pepper

Instructions

  1. Let marinate at room temperature for at least 2 hours the olive oil, garlic, fresh basil, dried tomatoes, fresh tomatoes and fresh ground pepper to taste.
  2. Cook pasta al dente. Drain and add immediately to the oil marinade.
  3. Toss well and serve.

Tips & Substitutions

For a more robust flavor, consider roasting the garlic before mincing it. If fresh basil is unavailable, try using a teaspoon of dried basil, though fresh provides a brighter taste. You can also add a pinch of red pepper flakes for a bit of heat. If you have leftover vegetables, toss them in for added nutrition. This dish is versatile and aligns well with various Italian recipes.

Serving Suggestions

Serve this pasta warm, topped with additional fresh basil and a drizzle of olive oil. It pairs beautifully with a side of Italian Sweet-Sour Dressing on a fresh salad or alongside grilled vegetables. This dish is perfect for summer gatherings and can be complemented with crusty bread or a light white wine for a refreshing meal.

Storage & Reheating

Store any leftovers in an airtight container in the refrigerator for up to 3 days. To reheat, add a splash of olive oil to a skillet over medium heat and warm the pasta gently, stirring occasionally. You can also microwave it, but add a little water to prevent drying out. Serve with fresh basil on top for extra flavor.
