  • 3 cloves garlic
  • salt
  • pepper

Instructions

  1. In a large pot, combine the whole chicken, half of the curry powder, salt, pepper, and garlic; add water.
  2. Bring to a boil and cook until the chicken is completely cooked.
  3. Remove bones and skin from the chicken, but keep the broth.
  4. Return the chicken to half of the broth and add canned chicken broth, chopped tomatoes, remaining curry powder, and additional seasonings if desired.
  5. Simmer the mixture until the sauce thickens.
  6. Serve the curry over rice.

Tips & Substitutions

For a milder flavor, use less curry powder and opt for a sweet curry blend. You can substitute the whole chicken with chicken thighs or breasts for a quicker cooking time. Adding coconut milk can also enhance creaminess without overpowering the mild spices. Fresh ginger can complement the garlic well. For a vegetarian version, substitute chicken with chickpeas or tofu.

Serving Suggestions

Serve the curry over fluffy rice or with naan for a complete meal. A side of steamed vegetables or a simple cucumber salad can add freshness. For a heartier option, pair it with Indian Rice or serve as a filling in wraps. This dish pairs beautifully with Butter Chicken for a delicious Indian-inspired feast.

Storage & Reheating

Store leftover Mild Chicken Curry in an airtight container in the refrigerator for up to 3 days. To reheat, warm it gently on the stove over low heat, adding a splash of water if it has thickened too much. It can also be microwaved in short intervals, stirring in between, until heated through.
