Ingredients

  • 1/2 cup chopped onion
  • 1/4 cup sliced celery
  • 1 tablespoon margarine
  • 1 1/2 cups water
  • 2/3 cup uncooked rice
  • 2 tablespoons snipped parsley
  • 1 1/2 teaspoons instant chicken bouillon
  • 1/2 teaspoon curry powder
  • 1/8 teaspoon allspice
  • 1/2 cup raisins
  • 1/4 cup chopped peanuts

Instructions

  1. Saute onion and celery in melted margarine until tender.
  2. Stir in water, uncooked rice, parsley, chicken bouillon, curry powder, allspice, salt, and pepper.
  3. Bring to boiling, then reduce heat, cover, and simmer for 15 minutes or until rice is tender and liquid is absorbed.
  4. Stir in raisins and chopped peanuts.
