Mild Fish Chowder
Ingredients
- 2 cans chicken broth nonfat
- 2 cans water ⓘ
- 3 cups potatoes cubed ⓘ
- 2 tablespoons rice long grain ⓘ
- 1/2 cup carrots sliced ⓘ
- 1 teaspoon dill weed ⓘ
- 1 tablespoon margarine ⓘ
- 1 cup leeks sliced ⓘ
- 2 each onions green, sliced ⓘ
- 1 tablespoon flour, all-purpose ⓘ
- 1 cup corn frozen ⓘ
- 13 pound fish fillets mild, such as turbot ⓘ
- 1/2 can tuna fish in water ⓘ
Instructions
- In a large pot, combine chicken broth, water, potatoes, rice, carrots, and dill weed.
- In a skillet, melt margarine.
- Saute leeks and green onions until soft.
- Mix in flour until smooth and remove from heat.
- Add leek-flour mixture to soup.
- Simmer soup until potatoes are fully cooked (about 20 minutes)
- Stir in corn, fish, tuna, and tuna liquid.
- Cook 5 minutes more or until fish is fully cooked.
