  2. Cook to a soft ball stage (about 240°F or 115°C). Remove from heat and add 2 tablespoons butter and 2 cups pecans.
  3. Put back on heat and cook a few minutes.
  4. Add vanilla or rum flavoring and soda, then beat well.
  5. Drop by teaspoonfuls onto wax paper before it spreads thin and sets up.
