- Preheat oven to 300°F.
- Combine graham cracker crumbs, sugar, and melted margarine; press equal portions onto bottoms of lightly greased or paper-lined muffin cups.
- In a mixer bowl, beat cream cheese until fluffy.
- Gradually beat in sweetened condensed milk until smooth.
- Add eggs and vanilla extract; mix well.
- Spoon about 3 tablespoons of mixture into each prepared cup.
- Bake for 20 minutes or until the cake springs back when lightly touched.
- Allow to cool.
- Chill before serving.
