- Cook the potatoes and carrots in a pot of salted, boiling water for 10-12 mins, until very tender. Drain then add 2 tbsp butter, 3 tbsp cheese, and the nutmeg and season with salt and pepper. Mash using a potato masher until smooth.
- Preheat the oven to 400°F.
- Heat 2 tbsp butter in a saucepan, add the onion and celery and saute for 2-3 mins, stirring. Add the ground beef and continue to cook, stirring, for 3-4 mins. Season to taste. Divide the mixture between 4 ramekins and top each one with the mash. Sprinkle each ramekin with cheese then bake for 15-20 mins until golden. Serve.
