Miniature cheesecakes with vanilla wafers base and fruity topping, perfect for individual desserts at parties or special gatherings, combining creamy filling with sweet fruit filling.

Ingredients

  • 24 vanilla wafers
  • 2 pkg. (8 oz.) cream cheese
  • 3/4 cup sugar
  • 2 eggs
  • 1 Tbsp. lemon juice
  • 1 can blueberry pie filling

Instructions

  1. Line cupcake pans with liners.
  2. Place a vanilla wafer in the bottom of each liner.
  3. In a small bowl, beat cream cheese, sugar, eggs, lemon juice, and vanilla until light and fluffy.
  4. Fill the liners three-quarters full with the mixture.
  5. Bake in a preheated 375°F oven for 15 to 20 minutes.
  6. Top with pie filling of blueberry, cherry, or peach.
