Mint Iced Brownies

Ingredients

  • 1/2 cup butter
  • 1 cup sugar
  • 2 large eggs
  • 1 teaspoon vanilla extract
  • 2 ounces chocolate unsweetened
  • 1/2 cup pecans finely chopped
  • 1/2 cup flour, all-purpose sifted
  • 4 tablespoons butter
  • 1 1/2 cups powdered sugar
  • 3 tablespoons evaporated milk
  • 1 teaspoon mint flavouring

Instructions

  1. BROWNIE LAYER:
  2. Cream soft butter with sugar.
  3. Add eggs one at a time and mix until creamy.
  4. Stir in vanilla and nuts.
  5. Gradually stir in flour; being careful not to overmix.
  6. In microwave, melt chocolate 2 to 3 minutes in small glass measuring cup, stirring after 1 1/2 minutes.
  7. Stir chocolate into batter evenly.
  8. Pour batter into greased 8-inch square casserole.
  9. Spread evenly.
  10. Cook 7 to 8 minutes on high, rotating after 3 minutes.
  11. Allow to cool.
  12. MINT LAYER:
  13. Cream butter and sugar.
  14. Add milk and blend until creamy.
  15. Add flavoring and enough color to be light green.
  16. Carefully spread over cooled brownies, evenly.
  17. Allow mint layer to firm up before adding chocolate layer.
  18. CHOCOLATE LAYER:
  19. Melt in glass measure cup for 2 to 3 minutes.
  20. Stir after 1 minute.
  21. Allow to cool and spread over firm mint layer.
  22. Spread carefully so mint and brownie layers are not disturbed.
  23. Allow to stand several hours.
  24. Cut into squares to serve.
